Paleo AIP Oatmeal

I don’t usually post about food, but breakfast this morning was interesting. It’s noatmeal! It looks, and tastes (mostly) like oatmeal, but it’s made of squash, banana and coconut flakes instead of oats.

Normally I don’t go for food that’s trying to be other food. For example, I don’t hate myself enough to eat turkey flavored soy chunks (aka: tofurky).

But, with this diet, breakfast is basically dinner at 6am. We’re talking meat patties, sauerkraut, avocados, salads…. It’s glorious most of the time, but sometimes you just want something simple and familiar like oatmeal.

It was my nutritionists idea to try this recipe, and I was totally down. But, when it came time to make it, I was predictably cranky (see above meme). Ken made it anyway, and I gotta say, it wasn’t bad. The coconut flakes are a little crunchy, which isn’t super oatmealy, but it’s still a passable substitute, and I’ll definitely be doing it again.

Oh, and that mug isn’t full of coffee, it’s bone broth, ya’ll! Yep. I’m givin’er a 110% with this thing.
